Breakfast Recipes and Ideas for People with Diabetes

Here is a question I recently received at FOODPICKER.org

Q: I have type 2 diabetes and am having trouble with breakfast.  It seems so many breakfast foods are high in carbs.  Could you give me some breakfast ideas that are diabetic friendly?

A: Breakfast can be a challenge, especially traditional cereals, muffins and bagels which can be loaded with carbohydrates. If these are the only options you have time for in the morning, just be sure that you read the food labels and choose something with fiber.  Fiber will fill you up and keep you full longer. Look for something that has over 4 grams of fiber in it per serving. Aim for 10 grams of fiber at each meal if you can. (Fruit and vegetables also have fiber!)

In addition to the carbohydrates, make sure you get some protein and a little bit of fat in with your meal as well, not only will this provide your body with the nutrients it needs but it will help keep you full until your next meal.

Other options to consider include eggs – try egg whites, they are a great source of protein and low in calories. If you want a little color, add one egg yolk to a couple of egg whites. You can make an omlet with vegetables and some low-fat cheese, add a piece of toast and you’ve got a great breakfast!
