Chicken and Couscous Recipe

Here’s another fast, easy and healthy recipe.
The use of seasonings like garlic, lemon and oregano add great flavor and make the need for added salt or fat unnecessary.
Preparation/Total time: 15 minutes
Servings: 4
Ingredients:
- 6 cups of frozen broccoli
- 1 package of whole wheat couscous roasted garlic and olive oil
- 4 boneless, skinless chicken breasts (4 oz each)
- Juice from 1 lemon or 4 tablespoons of lemon juice
- 1 tablespoon minced garlic
- 1 tablespoon dried oregano
- 1 large tomato, seeded and chopped
- Pam or fat free cooking spray
Directions:
- Follow directions to cook couscous – Do not add olive oil (this cooks in about 5 minutes after the water boils, so plan accordingly)
- Flatten chicken to 1/4 inch thickness (wrap chicken in plastic wrap and then pound with a mallet or whatever is handy).
- Rub chicken with lemon juice, garlic, pepper and oregano
- Spary a large skillet with cooking spray and brown chicken over medium high heat until juices run clear.
- While the chicken cooks, microwave broccoli for approximately 4 minutes
- Once couscous finishes cooking, stir in tomato
- Portion out couscous on your dish and then add the chicken breast and broccoli
