My name is Mandy Seay and I’m a registered and licensed dietitian. I did not always know I wanted to be a dietitian. I went to college (the first time around) for photo journalism. Once I graduated, I had no idea what I wanted to do and the competition for a job was fierce. I ended up joining the Peace Corps and moved to Ecuador to live and work for 2 years.

Living in Ecuador was a life changing event for me. I began to see life in a whole new light. I had gained 30 lbs and was a host to all sorts of parasites and bacterium from the poor sanitation and contaminated food. It was at that time I became interested in nutrition.

Once I returned to the US, I began to implement scientifically based strategies I had learned in order to heal my body and lose weight.

Once I achieved my goal, I realized I had never felt better and I had found my true passion. Long story-short, I went back to school for a degree in nutrition, landed a spot in a dietetic internship, passed the exam and got my dream job – working as a nutrition consultant – mainly doing one-on-one counseling. Although I never did become a rich and famous photographer, the writing skills I’ve learned along the way have proven to be extremely valuable.

While the majority of my posts are written for people with diabetes, most of the same concepts can be applied to everyone – diabetes or not.
